They are adults but it's still the duty of the coaching staff to lay down the law as to what is acceptable behavior on and off the field.
It goes both ways. If Spurrier let them get away with that crap then of course it's going to happen. Gibbs on the other hand is not going to let that stuff fly and I can guarantee he will let everyone know it right off the bat. As great of a X's and O's man Spurrier was (supposedly), he wasn't a good leader of men. And in football especially, argueably more than in any other sport, you have to be able to lead to be successful.
