Looking at the 3 screens again, and remembering the drills that we saw Orakpo and Kerrigan doing where they painted the path to take on the field, it looks like Watt took a perfect path to Griffin. First pic, he is lined up on the hash marks, shaded insided. 2nd pic, he is engaged with Polumbus but still on the hash marks, meaning Polumbus didn't get any push toward the sideline away from Griffin. 3rd pic, he is attacking Griffin at exactly the 7 yd mark and Polumbus is chasing him at that point. Griffin was actually in the pistol, meaning he got the ball and took two steps back, looked left (probably to draw the safety away) then was at the midpoint of his release when Watt got there. Ideally (I think) from pic#2's position, you would either want Watt to be about a yard toward the sideline, a yard deeper than the qb and having to come back toward Griffin.
Good point about the RB, but it looks like he was to release underneath and if so he wouldn't be in a position to get an outside chip.
Polumbus grades high as a run blocker, but the coaches have to know he can't set an edge on any speed rusher. (I don't think Moses or Compton can either
