The team may bring in a good but older (30-32) OT FA for a very short contract, in case the best rookie LT isn’t ready at the start of the season. I think the second and third round picks will go toward TE, WR before OT, but they’ll overcome that with numbers of picks including UDFA.

Who would that be? According to Sportrac, there are 9 left tackles in the free agency and the top 2 - Andrew Whitworth and Anthony Castonzo are likely to resign with their teams.

Again, I'm not saying that Penn would be great replacement if and when we trade Williams away but I think he might be the best choice out of all available tackles. Peters is a good player but unreliable, he had numerous of injuries that forced him to miss games.
