I'll buy this argument. While an authentic cheesesteak never ever has mayo on it (just some american or whiz and onions, maybe some peppers), a steak and cheese hoagie/grinder/sub has lettuce and mayo on it (tomato too if you want) and some grilled onions and usually provolone is the cheese of choice. most of the places outside Philly do not make it greasy enough, so the mayo is needed to make the sub a bit more wet.
