Interestingly enough, the best coffee shop I visited in Amsterdam is owned by a pair of Americans from Delaware... it's called the "Grey Area." It's got a real American stoner vibe to it, being one of a few shops with actual house bongs... plus they sell their stuff in US weight, while everyone else uses the metric system. I also played (what seemed like) the longest game of chess here too.
The red light district was super clean, much like the rest of the city. I guess it's regulated by the government, so it has to be pretty legit. Walking through it, some of the girls are kinda flirty aggressive- they'll just tap the windows and smile at you... whereas I've heard stories about the third world girls being just in your face aggressive cuz they need the money. We stayed clear, just b/c the idea is still kinda foreign to us.
While I expected the city to be kind of like a party central, Amsterdam had a real calm and conservative vibe to it. The citizens just went about their business and the buildings and cobblestone streets reflected a historic atmosphere. Although I heard stories of being able to ask a cop for a light, I learned it's really not polite to smoke outside in public... I noticed a group of people leaving the area around me the first and only time I tried it.
Oh yeah, for anyone thinking of visiting: beware of the space cakes and shakes... the stuff is pretty strong. I ate a space cake in one shop and kind of lost my motor abilities to walk (or so my brain told me). And then I got munchies and proceeded to eat more cakes, forgetting that they weren't normal baked goods... those were the days...
