The second year (2004) is when Larry Fitzgerald came in, he did not do so well either - 58 catches for 780 yards.. I think it's because of the QBs situation, I also checked the 2004 rooster list.. Turns out that Luke McCown, Shaun King, and John Navarre were the QBs - I am going to assume that McCown was the one throwing balls to the receivers.. Jeff Blake (I have no idea who he is) was the one who threw balls in 2003 - I believe he retired after that season..
The 2005 season was when Kurt Warner came in.. Boldin had 102 catches for 1,402 yards and Fitzgerald had 103 catches for 1409 yards.. Those facts are enough for me to say that the fact of Boldin wouldn't be great when Fitzgerald isn't on the field is moot..
