				The problem with bacon, is people like it different consistencies.  If my bacon is crispy, I dont much care for it -- which flies in the face of what others say.  Sausage is much more uniform as far as how it gets cooked..

 Exactly, unless I'm adding it to a dish for texture (say a pasta or sauce to go on fish) I want it chewy
