You're right, it likely will never be known, and if the woman was smart, she would say he jumped into the back of the truck saying he was going to kill her, that way it looks like self defense. We will never know if it's true or not.
I'm not sure I would say it's death by her hand though. When you do something amazingly wreckless like jump into the back of a moving truck, you accept the responsibility of what could happen. There is a reason there are no seat belts in the bed of a truck, and there is a law about transporting people in the beds of trucks.
Ask yourself, what would you do if someone twice your size jumped into the back of your truck saying horrible things like "I'll kill you" etc (not saying that happened, just pointing out, if it did, this scenario becomes understandable.) It's possible that Henry was so enraged that he even tried to open her door while driving down the road and he fell off.
Point is, we have no clue what really happened. It seems more "logical" that Henry was being agressive and this tragic incident happened. But it could have easily been something far less crude. If you are trying to get away from someone, why would you chase them to the point of jumping in the back of their truck? Ultimately, the responsibility is on Henry, not the woman.
