I'm the same type of person but with those type of companies I don't have a problem. I just tell them that their service isn't worth the money that they're charging and the competition tends to have a better price point for what I need. Typically they either give you a free upgrade or reduce the price. If you want the upgrade say you don't like how much you pay. If you want the reduction tell them that you're canceling. You don't have to really complain. Services are negotiable whether it be lawn service, cable/internet/phone, or whatever the case. It's just like buying a car, they'll be happy to have you as a customer and understand that not everyone walks into it and throws them whatever they ask for.

You can pretty much always get Sunday Ticket cheaper, just tell them that you only want it for one team and it's cheaper to go to the bar than to pay their price. With Dish Network they removed the NFL channel from the basic package so my stepfather called and told them that he wasn't happy with their decision and he shouldn't suffer because DN and NFLN were having a squabble and that it seemed childish for them to put it out there publicly. He reminded them that DirecTV, though in dispute, still had it in their basic lineup. He got the upgraded package for the same price.. just don't let them try that we'll give you 3 free months of HBO and Showtime stuff.
