But then again, I suppose it becomes the law of supply and demand. Less QBs in the draft makes the ones left in the draft more valuable. Just seems crazy to have to draft a QB higher than you might have because the other guys didn't declare.

I think this is a rare case where supply and demand may increase or deflate at the same rate. I think a RGIII, Barkley, Luck type may get teams fired up to draft a QB but if they are not there they will probably look to fill another need vs. drafting a Tannehill type earlier then expected.
