As I, and That Guy, have stated, it's because restructuring your deal makes you a good candidate to get cut in the future. By converting a base salary into a bonus, you aren't cutting the guy's pay, you are simply deferring some of the cap space to subsequent seasons. By deferring some of the cap space to subsequent seasons, you make yourself more costly in the future. Making yourself more costly in the future is a bad idea when you are nearing the end of your career.

It only makes sense to restructure when a team has more to gain from cutting you now than keeping you. That is not the case with Brunell, who is more expensive to cut than keep.
