Thanks guys. I think the pan sear is the way we are going to go. The question is how long on each side in the oven. It is bone in and a good two inches thick.
I always use the thumb test.

That pan is going be really hot it will cook quick. Make sure you use Koscher salt it helps make the outer crust.

Re: How To Cook A Rib Steak

Pan searing, if done right, creates a brown or sometimes even blackened crust around the edge of the meat. A lot of people really like that but it's not for me.

For me, grill is the absolute only choice but there's a lot of good ways to kill the cow on this one, so to speak. Nyuk nyuk.

To each his own.

If your gonna grill it outdoors.....Over wood is the only way to go. Not to close to the flames. Cook it hot, but don't scorch the sides. If you leave it on to long, (like cooking a Fresh Ham, Pork Roast or Brisket) it will want to dry out.....mmmmmmmm!!

So how did that steak turn out last night and did you set off a smoke alarm?. My guess is you had to pan cook that thing for 15min or it was very rare.

Here watch the video I have done it plenty of times. IT creates some smoke but just run the fan. The fire department is not coming.

Pan-Seared Rib-Eye Videos : Food Network

It comes out really good. Make sure your steak is room temp before cooking it.

It is because the internal temp is too low. I usually take my steaks a 1.5 hours before cooking.

I only let a thicker steak get to room temp. A thinner steak I want very cold so it does not cook to quick and I can get a better sear on the meat without over coooking it.

I personally like a steak broiled in the oven the most (this sounds just as good). But i only do it if i have to because of all the smoke that causes the house to smell like shit for a couple days. My kitchen isnt fully exhausted though, just an over-range microwave vent.

If you do it Alton's way most of the smoke is at the range. Once you get it in the oven you have gotten must if not all of the entail smoke out of the way.

But I hear you, it is why I don't ever really cook bacon I hate having that smell around forever.

Serious? That's the BEST part about making bacon.

No shit. Nothing better then waking up to the aroma of bacon and coffee.

Did we ever get a report back from Joeredskin about how his steak went or maybe his body is in a cholesterol shock from him eating a 2 inch thick ribeye.

Dude.... This recipe was AWESOME. I gave it a try and really enjoyed it. Steak was super tender, cooked perfectly. There was very little smoke. I used vegetable oil instead of canola because that's all we had. Added garlic powder and paprika.

My only regret. Moved the pan off the heat when I put the steak in... grabbed the handle out of habit to move it back. First degree burns for the win!
