I dont have a skillet, but it would be nice to try one day.
Ive have actually had really good secuss baking bacon. I put foil on a cookie sheet/pan and then lay the bacon right next to each other. No major smell and easy to clean up.

When I fix a steak I usually go to my grill. It gives a better flavor, sear, all of that. So take it out of the fridge a while before starting. I usually have a very hot side of the grill to get a good sear. Then my middle grate has less fire but still the heat. Once I get both sides seared well move it to the middle grate until it's about medium or at least what the thumb test tells me. Enjoy it ! And an early Happy Birthday to you !

^ Agree, baking it is the way to go. Easy cleanup, less lingering smell. Just easier overall.

Obviously the best way is doing it bed side with a George Foreman; just don't burn your foot.

I'm a grill guy when it comes to steaks. Any steaks...charcoal grill, dual zone. Sear both sides on direct side, finish off on indirect side.
Bacon - we always bake it. I have a few of these that I put on a cookie sheet. Put bacon on rack, put rack in cookie sheet, put sheet in 350-375 degree oven until done.

My wife does most of the cooking, but when it comes to breakfast, I'm the one in the kitchen. Not that she doesn't make good breakfast (she does), but I love making breakfast. My Dad was the same way growing up. Weekends, he'd man the kitchen for some awesome breakfasts. He always told the same story about being a short order cook in a diner near College Park, where the main cook was able to crack 3 eggs at a time with one hand onto the griddle without any shells in the eggs.

Thanks for all the advice. We ended up pan searing and oven roasting. Put it in the oven for about 8 mins. @ 500 and it came out perfect.
