Had tartare twice. Enjoyed it, because it's meat. But the best thing about steak is how it crusts up when a marbled piece of meat hits a really hot surface.
That brown caramelized fat is where all the flavor is. I agree, prefer cooked.

Tartare is good but I definitely prefer it cooked. Love raw fish though.

Would love to see how it's prepared in the US. In France, a real good tartare is fresh meat cut with a knife, mixed with onions and capers and a lot of shit. I personally love it when it's well prepared. Otherwise it's just raw meat...

I don't care for raw meat of any kind. I can get into a blood-dripping rare steak on occasion because I enjoy the sear with the wonderful taste of cooked fat mixed with the taste of rare red meat.

Have had it the way you described it a few times. A couple of times it had a raw egg on top. Definitely pretty tasty, but I'll take a cooked steak 10 out of 10 times.
